Banana Loaf Cake
Ingredients
- 2 cups all-purpose flour
- 1 1/2 cup white sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda
- 2 eggs
- 3 medium ripe bananas

Method
- Preheat oven to 350°F (180°C). Grease and flour the loaf pan
- Three mixtures are needed to make the batter for this cake
- Mixture A: Mash bananas and combine with buttermilk
- Mixture B: Stir together flour, baking powder and baking soda
- Mixture C: In a large mixing bowl beat butter with an electric mixer for one minute. Add sugar and vanilla, beat well till combined. Add eggs one by one, mixing well after each.
- Add the banana-buttermilk mix (mixture A) and the flour mixture (mixture B) alternately to the butter-egg mix (mixture C) in the mixing bowl. Beat on low speed after each addition until well combined. Pour into loaf pan. Bake for 50 to 60 minutes, or until toothpick inserted into center of cake comes out clean.
