Eggless Apple Cake
Ingredients
- 2 cup all-purpose flour
- 1/2 cup light brown sugar
- 4 tablespoons vegetable oil
- 2/3 cup apple juice
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 medium apple, finely chopped
- 1/2 cup raisins

Method
- Preheat oven to 350 F (180 C).
- Lightly grease a bundt or tube pan with oil.
- In a large bowl, sift together flour, baking powder, ground cinnamon and salt. Add the brown sugar. Gradually pour in apple juice and oil. Fold in the finely chopped apples and raisins.
- Spoon the mixture into the prepared pan and bake until cake tester (wooden toothpick) inserted in the center comes out clean, about 35-40 minutes. Turn out the cake and let cool completely before serving.
