Eggless Cake

    Ingredients
    • 2 cup all-purpose flour
    • 1 1/4 cup butter or margarine softened
    • 1 tin condensed milk (400 gm)
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 cup water
    • 1 teaspoon vanilla essence

    Method
    • Preheat oven to 400 F(200 C).
    • Lightly butter and grease two 9-inch-round baking pans or one 13x9-inch baking pan.
    • Beat butter till its light and fluffy. Mix together with condensed milk, water and bring it to a boil and let cool.
    • In a large bowl, sift together flour, baking powder and salt. Add the liquid mixture into dry ingredients and mix well.
    • Mix in the vanilla essence. Pour into prepared pan(s).
    • Bake at 400 F for 7 minutes then reduce the oven temperature to 300 F (150 C) and bake until cake tester inserted in the center comes out clean, about 35-40 minutes. Cool in pan(s) for 10 minutes. Run a knife around the edges to loosen cake from pan. Invert onto a wire rack to cool completely.
